How long do you leave sawn lumber before wood turning?

Sorry if this has been asked many times before, but I have some trees in my yard that have been freshly cut down. And I was wondering how do you have to wait before you can have a go at wood turning a piece into a bowl etc.
My friend has a lathe and we were going to hook something up where we could have a go at wood turning.
But he thinks the wood has to dry out first. But I said if we turn it first it can dry out afterwards anyway, and there will be less wood to dry out.
We could probably do an experiment and try both scenarios, but I was wondering if there was a conventional approach.
We really only want to make some bowls, but I'm worried about it cracking after the fact. And even if we would even be able to turn it, if it is freshly cut and still a bit damp in the center. I'm sure a good sharp chisel could cut it though so my gut feeling is it would be fine.
Wood is only dried for furniture to stop it warping right. But I don't mind a bit of a bent bowl, it might be quite interesting.
